City of Gastronomy – Rasht, Iran Pop-up Cooking Class & Dinner

Continuing the Cities of Gastronomy Around the Globe series, this event will feature a cooking class and pop-up dinner with the signature ingredients of Rasht, Iran, a fellow City of Gastronomy. Chef Janos Wilder will teach the course, which includes a demonstration, recipes, hors d’oeuvres, and a-five course dinner with beverages.

Cooking Class Demonstrations:
  • The Caspian Breeze
  • Fruits Delal
  • Summer Lentil Rice Salad + Grilled Flatbread
  • Griddled Trout with Dried Fruits, Almonds + Pomegranate Syrup
  • Eggplant, Pomegranate Khoresh with Herbaceous Walnut Sauce
Dinner Menu:
  • The Caspian Breeze: Minted cantaloupe and pomegranate juice gin cooler
  • Chilled Yogurt + Cucumber Soup: Walnuts, mint, dill, raisins, radishes, pomegranate molasses, dried rose petas
  • Fruits Delal: Sour apple, orange, barberry, almonds, cucumbers + pomegranate in cilantro/mint/parsley/yogurt dressing
  • Summer Lentil Rice Salad + Grilled Flatbread: Lentils, basmati rice, carrots, cucumbers, red onion + celery, toasted almonds in lemon citronette
  • Griddled Trout with Dried Fruits, Almonds + Pomegranate Syrup: Dried apricots, barberries, currants, toasted almonds + pomegranate syrup, basted with sour orange butter served on herbed rice
  • Braised Aromatic Lamb Shank with Yogurt, Oranges + Rose Petals: Lamb shank braised in orange juice, honey, garlic + rosewater served with eggplant koresh with herbaceous walnut sauce
  • Pistachio Ice Cream with Rice Flour, Cardamom + Cinnamon Cookies and Orange Blossom Syrup

Few things are as American as apple pie. Pastry chef Marianne Banes from Kingfisher will help you explore the world of pies and tarts beyond the American classic with recipes for items such as sweet tart pastry, flaky pastry, apricot frangipane tart, coconut buttermilk pie, perfect lemon tart, nectarine blueberry pie, and of course, sour cream apple pie. The 2-hour course includes recipes and dinner.

Coming up soon at the Carriage House:
  • 11 a.m. Saturday, July 30 – “Chef Chic” Wendy Gauthier with Alfonso Gourmet Olive Oils and Balsamics will guide you through a sampling of newly arrived southern hemisphere oils and fantastic balsamic vinegars while teaching you how to use these ingredients to make every meal shine.  Dishes include lemon olive oil poached shrimp over vegetable couscous in a Tuscan herb olive oil tuile, blood orange olive oil gelato with a lavender balsamic swirl, and skillet baked eggs with Baklouti green chile olive oil tomato in a hash brown nest. $60 per person.
