If you grew up in an American city such as Tucson or somewhere similar in size and speed, it wouldn’t be unfathomable to think that Italian food meant lasagna, pizza, pasta, and red sauce. Throw in the red checked tablecloths and for the majority, this probably sums up most people’s Italian food experience.
It’s a hard stereotype to break, but fortunately a handful of Italian restaurants are offering an experience that not only debunks, but rivals this expectation. Granted, there’s nothing wrong with lasagna, pizza, pasta, and red sauce. In fact, when prepared right, it brings a whole new reality to what Italian food is and what’s possible.
