The new bagel shop next to Pizza Luna is ready to take your order.
After a successful soft opening over the weekend, Bubbe’s Fine Bagels is officially open on Tuesday, October 12 at 1101 N. Wilmot Rd.
Back in the Fall of 2020, longtime Pizza Luna employee, Kyle Leuer, along with his partner Becca Groff, approached Marc and Tracy Frankel — owners of Pizza Luna — about the bagel concept and have since helped them move forward with their plans. The idea of opening the shop really took off after making bagels from leftover pizza dough.
“The soft opening was better than we could have ever expected,” said Becca Groff, operating partner of Bubbe’s Fine Bagels. “Words cannot describe how grateful we are to have the support of the Tucson community.”
If you’re looking for a small bite or perhaps enough to feed a large family, you’ve got a few options at Bubbe’s Fine Bagels. Single bagels are $1.50, a half-dozen is $8, and you can snag a Baker’s Dozen for $15, which is a total of 13 bagels.
For those looking for something more, a bagel and schmear is $3.25 and includes a variety of flavors like chive and green onion, honey lavender, and smoked salmon.
There’s also a Sesame Bagel with Lox, which is an open-face lox bagel with chive cream cheese, heirloom tomatoes, shaved red onion, and capers topped with EVOO, flaky salt, and freshly ground pepper. Aside from the open-face sandwiches, there’s a group of traditional bagel sandwiches on the menu, like the house-made Whitefish Salad on a Caraway Rye Bagel.
If you didn’t stop by for the soft opening, there are a few things you need to know about the uniqueness of the bagels. They’re inspired by the way they are made on the east coast, but with new-age techniques, and each tasty batch takes three days to complete.
“The process has been quite the challenge but we’ve had some amazing help along the way,” said Groff. “We were lucky enough to shadow at a bagel shop in Lexington, Massachusetts called Wicked Bagel. They were incredibly welcoming and knowledgeable about the somewhat gatekept art of bagel making.”
The new shop is opening Tuesday – Sunday from 7 a.m. – 2 p.m. (or until they run out).
