Taste Fine Dining History at The Cork Michelin-Themed Wine Dinner

Tucson steakhouse The Cork brings global fine dining with its upcoming Michelin Through the Years wine dinner. This exclusive event happens on Tuesday, June 17. Each of the courses pays tribute to a famous Michelin-starred chef and restaurant, plus chef legend Auguste Escoffier.

1st Course: Thomas Keller’s Salmon Tartare Cornet

The evening begins in 1994 Napa Valley, California. Inspired by French Laundry and chef Thomas Keller, the course features a cornet of marinated Atlantic salmon. A sweet onion crème fraîche complements each bite. Guests will enjoy this course with a Bertrand Crémant Rosé 2021.

2nd Course: Auguste Escoffier’s Lobster Thermidor

Next, the journey travels to 1881 Paris. The menu honors Auguste Escoffier’s legacy at La Maison Maire. The course highlights lobster sautéed with Béchamel, cognac, Dijon, and Gruyère. The broiled dish pairs beautifully with a Stag’s Leap Chardonnay 2023.

3rd Course: David Chang’s Mushroom Pistachio Salad

Then, the spotlight shifts to Manhattan in 2007. Chef David Chang’s mushroom-pistachio salad from Momofuku Ko takes center stage. It includes roasted oyster mushrooms, pickled radishes, sunchokes, and microgreens. Diners will sip Erath Pinot Noir Reserve 2021 alongside this course.

4th Course: Carême’s Classic Tournedos Rossini

Tucson diners will then taste 19th-century France. Marie-Antoine Carême’s Café Anglais inspires this luxurious course. It features a tournedo with foie gras caramel, shaved truffle, and brioche. A roasted baby carrot purée and potato pavé complete the dish. The pairing? Borgogno Barolo 2020.

5th Course: Massimo Bottura’s Lemon Tart Finale

Finally, the dinner concludes in Modena, Italy. The 2012 dessert from Massimo Bottura’s Osteria Francescana Oops, I Dropped the Lemon Tart arrives with flair. Expect lemongrass ice cream, strawberry gel, zabaglione, and chocolate soil. Enjoy it with a glass of Château Carmes Rieussec Sauternes 2020.
