A new pop-up concept is hitting the streets of Tucson.
The “Waldo” Pop-Up dinner is making its debut at Arizona Wine Collective in the St. Phillips Plaza from 6 – 8:30 p.m. on Wednesday, March 20.
The experiences were designed to give a communal-style dinner party that’s aimed at bringing the essence of dining back into play. Another neat feature to these dinners is that you’re encouraged to leave your phone at home, which allows you to focus what’s on the plate in front of you instead.
Each Waldo dinner will have a menu created from scratch with the use of local ingredients — making the meal all about the support of Tucson and surrounding Arizona communities.
Tickets are $95 per person and each course will be paired with an Arizona wine.

Starter
- Local Charcuterie Selections
- Paired with a 2017 Rosé, Rune Wines
First course
- Sweet Potato Medallions – with bacon artichoke chutney and brown sugar coulis
- Paired with a 2015 Chardonnay, Pillsbury
Second Course
- Rosemary Brisket in a Blanc au Pouis – with whipped red potato
- Paired with a 2013 Tempranillo, Callaghan Vineyards
Third Course
- Apricot Cobbler – with cinnamon whiskey ice cream
- Paired with a 2015 Manzora Red (Zinfandel, Petit Verdot), Golden Rule Vineyards
