Eggplant Parmesan Sandwich With Vegan Smoky Cheeze Spread

Another boyfriend-approved vegan recipe, this extraordinary eggplant parmesan sandwich is crisp and tender. Combining a generous spread of a homemade vegan smoky “cheeze” spread and local oregano red sauce, this sandwich aims to please with a perfect savory zest.

Eggplant, a member of the nightshade family, is often misunderstood among those who are inexperienced with its great taste and versatility. But, don’t let that stop you from enjoying the endless ways to relish its silky-smoky flavor. Easy to prepare, the skin can be peeled or left intact before slicing into thin medallions. Sprinkle all slices with salt allowing them to “sweat” for up to 30 minutes. Although, there is some debate to whether it’s necessary, this technique works to tenderize and remove moisture and bitterness.

Choosing fresh ingredients grown without pesticides will always provide the best quality and taste. Eggplants contain certain essential phyto nutrients which improve blood circulation and nourish the brain. Eating the skin provides cardio-protective antioxidants that are unaffected by cooking.
