Pickle Hummus? Try it at Pita Jungle for National Pickle Day

Pita Jungle, located at 7090 N Oracle Rd. # 128, is celebrating National Pickle Day on Tuesday, November 14, by bringing back a fan favorite – Pickle Hummus.

The local Mediterranean restaurant group teased Pickle Hummus as a joke on April Fool’s Day a couple of years back, and they unexpectedly had a huge response of guests wanting to try it. So, they did what most businesses would do and decided to create the dill-licious recipe.

“On April Fool’s Day, 2021, we decided to post a fake pickle hummus menu item on social media,” Pita Jungle shared. Little did we know it would generate such a stir! Not only did thousands of customers react, but pickle lovers around the valley showed up at our restaurants, ready to try out the new flavor.”

Pickle Hummus has since been featured on seasonal menus and is now back on the menu from Monday, November 13 – Sunday, November 19 at Pita Jungle.

Also, if you are interested in making Pickle Hummus at home, Pita Jungle has shared their recipe online. “We thought it was time to share this recipe with pickle lovers everywhere. A true testimony to the Mediterranean diet: it’s simple, quick to prepare, super nutritious, healthful, and delicious. Enjoy!”

Pickle Hummus Recipe

Ingredients
  • 15-ounce garbanzo beans (can), drained and rinsed
  • 3.5 tablespoons of tahini
  • 5.5 tablespoons of lemon juice
  • Three cloves of garlic
  • Two medium Mediterranean pickles (diced)
  • Half-teaspoon of salt
  • Two tablespoons of extra virgin olive oil
Garnish:
  • Pinch of paprika
  • Pinch of cumin
  • Some minced pickles
Preparation:

In a food processor, add the garbanzo beans, tahini, minced garlic, and salt. Turn the food processor on, drizzle the lemon juice, then slowly drizzle in the extra virgin olive oil. Stop the food processor and with a spatula move the ingredients, and then blend it all again. Continue to repeat processing, if necessary, until you have a smooth consistency. If it becomes too pasty, drizzle in some water.

Remove from the food processor, place it in a bowl, and mix in the diced pickles with a spatula.
 

To Serve:

Scoop a few tablespoons in the middle of a plate and swirl into a hummus crater. Sprinkle some cumin and paprika, and garnish with extra minced pickles. Serve with your favorite chip (pita or blue corn chip).

Again, it’ll only be available at the Tucson location from Monday, November 13 – Sunday, November 19.
