AZ Arts Live presents ‘In the Kitchen’ with chef Janos Wilder

Showcasing the rich diversity of Southern Arizona

Local legend and admired chef, Janos Wilder, is teaming up with AZ Arts Live for the next “In the Kitchen” culinary video session.

During the event, you’ve got a front-row seat as Wilder takes you through the preparation of his “Ready for Renaissance” four-course dinner. One of the best parts is that you get to eat the meal, too.

The multi-course meal features scrumptious bites, like the Tucson Spring Garden Chile Relleno Salad and Pan-Seared Cabrilla Mojo de Ajo, and will be available for take-out with orders beginning on Monday, April 26.

On Thursday, April 29, you’ll then be able to pick up the meal at The Carriage House, which is located downtown at 125 S. Arizona Ave., between 4 – 5:30 p.m. It’s all meant to take home so you can enjoy watching the magic behind the meal on your screen of choice.

For his special menu, the James Beard Award-winning chef will be highlighting the “rich diversity of Southern Arizona,” all while using some classic, local ingredients like chiles, cholla buds, and native beans.

Tickets start at $70 per person, which includes the meal and video demonstration.

Chef Janos Wilder’s “Ready for Renaissance” Menu

First Course
  • Tucson Spring Garden Chile Relleno Salad – roasted Anaheim chile with black turtle bean ‘soil’, snap peas, fava beans, fresh cholla buds in escabeche, radishes, borage blossoms, and jalapeno orange vinaigrette
Second Course
  • Pan-Seared Cabrilla Mojo de Ajo – green corn tamale pie, roasted butternut squash sauce, and salsa fresca
Third Course
  • Lamb 2 Ways from the Heart of Mexico – loin with chipotle recado, mushroom chilaquiles, Native Seeds/SEARCH mole, green chile vinaigrette, lamb shoulder barbacoa, and chipotle molasses sweet potatoes esquites
Fourth Course
  • Dark Chocolate Jalapeño Ice Cream Sundae Kit

In the video coming soon to AZ Arts Live’s YouTube channel, Wilder will be discussing his guiding principles in regards to building flavors in dishes, how to create modern dishes using ancient ingredients, and how he develops his own unique Tucson flavor.
