Chilaquiles Poblanos with Chef Jess of La Chingada

Stepping in to the shoes of former Cafe Poca Cosa was no small feat, so Chef Jess brought her family recipes into the space. The refined recipes are celebrated in bold flavors, satisfying textures, vibrant colors and crave inducing smells at La Chingada. Case in point is the chilaquiles poblanos. Freshly made fragrant masa tortillas turn into hot and crunchy chips that get dressed in her aunt's poblano sauce and topped with a juicy mound of shredded chicken tinga. This dish should be on your list of essential eats in Tucson!

Love comes through every dish at Alejandro "Serious Mexican, Mariscos, & Fusion Food" where each item on the menu is dedicated to Chef Alejandro's family and friends. The Campechana is a celebration of Alejandro's brother Gilbert's life. In 2021, Gilbert tragically passed away suddenly before sharing his dreams of opening a restaurant with Alejandro. In his honor, Chef Alejandro opened Alejandro "Serious Mexican, Mariscos, & Fusion Food" to continue both brother's passion for bringing joy to people through food. This passion is taken with great care in all the food at Alejandro, which explains why the campechana is so fresh you feel transported to the beach. The melange of abalone shrimp, octopus, scallop, homemade shrimp broth, is dressed up with a colorful compliment of tomatoes, cucumber, serrano pepper and a final touch of tajin and chiltepin sauce. This attention to quality is a language of love.

Alejandro is open as a Taqueria on Tuesdays and Wednesdays.

Grilled Jalapeño Poppers, the correct way.

September 24th

Jalapeño poppers are usually associated with a deep fried battered outer crust but at Dante's Fire, Iron Chef Tucson Ken Foy pairs them down to dress them up. The fried batter gets replaced with a smoky and fresh blister of the bare grilled jalapeño. The traditional cream cheese filling gets a kick with a touch of Sriracha (no shortages here). A base composition of fire roasted marinated red peppers, fancy drizzles of scallion oil and balsalmic reduction add to the maximalist bite. Attention to texture and taste gives you a range of satisfaction with the house candied bacon and asiago foam.

Tucson Tamale is a nationwide household brand for premium Mexican Tamales. Tamale Bites is the new crunchy pop-in-your-mouth bit of happiness in their new line of foods. Sherry and Todd Martin started their business from a fateful tamale making day with Sherry's large, loud, loving Mexican family and a few cases of beer.
