
Miguel “Nachito” Lopez has operated his Tucson-based food truck, Chalypau, for two years, sharing his passion for Mexican cuisine with the community. Despite lacking formal culinary experience, Lopez drew inspiration from his parents, who worked in the food industry in Mexico. He began by cooking for himself, experimenting with available ingredients.
The concept of Chalypau started as a lighthearted suggestion.
“One day, my wife asked me what I wanted for Christmas, and I told her, ‘Just a grill to sell food.’ That’s where it all started — with a gift from my wife,” Lopez said.
He began selling birria and cabeza tacos from his home patio, promoting through Facebook. Friends and family soon gathered to enjoy his dishes, and word spread rapidly.
After a few years of home-based sales, Lopez expanded by launching the Chalypau food truck, aiming to reach a broader audience.
“One day, I want to open my own restaurant,” he said.
Chalypau’s menu features 11 options, including tacos, bean tacos, quesadillas, caramelos (quesadillas with meat), burritos, and tortas. Patrons can select from birria, cabeza, pastor, and carne asada meats.
The standout Taco Keto, replaces the traditional tortilla with a crispy cheese crust. Filled with carne asada, lettuce, avocado, cilantro, pico de gallo, onions, red salsa, and a squeeze of lime, it offers a flavorful twist on a classic taco.
The popular dish La Revoltosa tostada is topped with cheese and all four of their meats: birria, cabeza, pastor, and carne asada. Also topped with onions, pico de gallo, cilantro, red salsa, and lime juice, the combination of the crunchy tostada and savory meats, complemented by the sweetness of pineapple from the pastor, creates a delightful balance.
