Tucson’s Hamilton Distillers are known for their unique Southwestern take on traditional Scotch. Rather than malting barley over peat as they do in the old country, Stephen Paul came up with the idea to use mesquite to craft a single-malt whiskey.
The idea sprung from a casual barbeque in 2006, where the Pauls were barbecuing with mesquite scraps from their custom furniture company, Arroyo Design. As with most good ideas, Scotch was involved.
Paul and his daughter Amanda decided to pursue the concept and opened Hamilton Distillers, the first small-batch distillery in the Southwest. By 2013, three varieties of their signature Whiskey Del Bac were available all over Tucson.
If you haven’t had the opportunity to try Whiskey Del Bac, Local First Arizona members and non-members are invited to do so at Pastiche Modern Eatery on July 26. Two different whiskeys will be available:
- Mesquite Smoked Unaged – You may get complex aromas of leather, dried ancho chili, dust, and dried herbs on the nose. Smoke dominates the palette up front with sweet, vegetal notes on the finish.
- Classic Unsmoked Aged – With caramel, molasses and marzipan on the nose, and ripe stone fruits up front on the palette, the Classic delivers a spice and honey finish.
The event also includes Pastiche appetizers specifically paired with the different kinds of whiskey.
