Café Roka and Dos Cabezas WineWorks are teaming up for a special Dia de Los Muertos dinner.

The exclusive 7 course wine-pairing, prepared by Chef Rod Kass and Winemakers Todd & Kelly Bostock, will highlight regional flavors from across Mexico and Arizona local wines.

Though agave-based spirits like mescal and pulque are more traditional liquors for the holiday, Kass and the Bostocks are focusing on thoughtful wine and food combinations to create a unique culinary experience.

“Our wine dinners are not stuffy affairs; you get some info about the evolution of the served wine, some insights about the interplay of wine and food, your palate gets a treat savoring many flavors, and you have some fun playing with your food,” said Fred Miller, the beverage manager at Cafe Roka. “What’s not to like?”

The seven-course dinner will include the following, paired with seven wines from Dos Cabezas:

  • Ceviche
  • Ensalada
  • Pork Chile Verde
  • A nopales vegetarian dish
  • A Pescado dish
  • A Carne dish
  • Postre

Last year’s dinner with Carlson Creek Winery featured the following dishes and more:

  • Salad of Oranges, Radish, Avocado & Jicama with a Honey-Lime Vinaigrette
  • Shrimp with Poblano Mole & Napolito Relish
  • Pork Gordita with Chile Colorado
  • Steamed Bass Vera Cruz

Dinner begins at 6pm on Sunday, November 1 from 6 to 9pm at Cafe Roka in Bisbee. Tickets are $76.95 per person.
