Healthy mobile food is joining the fray at Main Gate Square.

Cup It Up American Grill will open its second location at 760 N. Tyndall Ave., which formerly housed Silver Mine Subs.

Cup It Up’s first location opened in January of 2016 at 1101 N. Wilmot Rd. The second location is scheduled to open in the fall of 2016.

Though the new location will open just months after the original location, owner Christopher Smith is looking to continue expanding.

“Franchising is expensive and takes a lengthy amount of time,” Smith said. “We’re starting with opening in a few select locations. Eventually we want to scale it on a national level.”

The menu will be identical to the original location. Customers can choose from an assortment of proteins, a base of greens or grains, and toppings, which include grilled or chilled vegetables, sauces, and dressings. Lastly, customers can choose from “superfoods” such as avocado, blueberries, and chia seeds.

Mac-n-cheese is also available as a fun alternative. There’s also one fun addition to the new location — beer and wine will be available.

Customers can expect the same interior style as well, as Smith is looking to maintain the same feel by working with Repp+McLain Design and Construction.

Timing, Smith said, played a major role of the new location opening.

“The opportunity just recently came up,” Smith said. “It’s ideal. It’s almost impossible to find a lease opening in the University area, so we were lucky. Since we already had our concept developed, it made it easier to secure the lease.”
