DOWNTOWN Kitchen + Cocktails continues its “Around the Globe: Sisters Cities of Gastronomy” tour with a special Panama City menu from Monday, June 24 to Monday, August 19.

Panama City was named a UNESCO City of Gastronomy in 2017. The major global trade center results in a complex culture with a diverse mix of Latinos, Afro-Antilleans, Asians, and indigenous people. The rich biodiversity and a healthy marine ecosystem also help create its unique cosmopolitan cuisine.
Patacones with Shrimp Salad ($12 for 3) – fried plantain chips, Panamanian-style shrimp salad tossed in ajĂ amarillo, aioli potatoes, Manzanilla olives, cilantro
Trotter Salpicon Tostada ($12) – spicy citrus shredded pork on fresh corn tostada with cucumbers, onions, cilantro, chicharrones salad
Pollo con Arroz – chicken stuffed with Spanish chorizo and olive tapenade; on rice with peas, piquillo peppers, roasted tomatoes, tomato-scented dark chicken jus
Pan-Seared Cabrilla – carrot, passion fruit, ajĂ amarillo, and coconut milk sauce; char siu fried rice, stir-fried baby bok choy
The Carriage House will also host a companion cooking demonstration class and dinner by Wilder on Friday, June 28 from 6 – 9 p.m.
Seats are $70 per person and you’ll get a copy of all of the recipes and a multi-course dinner with drinks.
Summer Culinary Tour Schedule
Burgos, Spain begins on Wednesday, August 21 with class and dinner on Friday, August 23.

An adventurous foodie, he enjoys culinary experiences ranging from seasonal omakase to scarfing down late night green chili patty melts in his car. His favorite foods include aguachile, garlic noodles, and leftover fried chicken illuminated by the fridge light. His favorite drinks include morning micheladas, fireside imperial stouts, candle-lit negroni, and grassy mezcales.
Outside of food, he also loves playing musical instruments, karaoke, Tetris, Super Smash Bros. Melee, and petting Addie’s dog Spaghetti.
