Earlier this year, in February, we found out that the coffee cart parked at The Gardens at Bear Canyon was opening its very first brick-and-mortar location. Now, the time has come and the team behind Hillhouse Coffee is ready to open its doors at 1060 S. Kolb Rd.

The official Grand Opening date is Saturday, May 27.

They’ve been working hard to renovate the former Poco & Mom’s and Sonoran Brunch Co. spot near 22nd Street, and now it’s in prime position to be your go-to Cold Roast hangout. Cold Roast, which is not to be confused with cold brew, is something Logan Power and Eric Haberman are proud to serve in this desert climate.

“It’s essentially a coffee that we steep,” said Power. “It’s different from cold brew and the ratio of coffee to water, steeping time, and a few other elements as far as the roasting that we’ve manipulated. We have our cold roast coming out in a much faster window than an espresso machine does.”

Grand Opening Weekend

So, the crew wants you to celebrate the Grand Opening with them by offering free beverages on Saturday, May 27, and then half-off drinks on Sunday, May 28. Over the weekend the hours of operation will be 9 a.m. – noon.

Beginning Monday, May 29, Hillhouse Coffee will be open 6 a.m. – 6 p.m. daily.

At the moment, the coffee shop is drive-thru-only and the lounge area will open soon (the date is TBD). Keep an eye out for any updates on that by following the shop on Instagram, and they’re targeting to open a second location by Spring 2024.
