You know how you can quickly tell how gourmet a sandwich is by how good the bread is? You won’t find cheap bologna on artisanal sourdough often. Enter the world of Mediterranean food and a house-made wood-fired bread also makes all the difference.
Once upon a time in Green Valley, Brindis Bistro & Bar focused on pizza, panini, and soup. However, new ownership switched the focus to Turkish food and rebranded to Brindis Mediterranean Cuisine, still utilizing the wood-fired brick oven in the middle of the restaurant.
What’s so special about wood-fired bread? Those flaming hunks of wood can get the oven much hotter than a standard electric oven; think 800-900 degrees Fahrenheit. This rapid intense cooking puffs up the bread more into something with a fleeting crisp and fluffiness, best enjoyed in the moment.
Get some bread with their Mixed Appetizer Sampler, which features an array of all their cold starters: the fluffy, sesame rich hummus, creamy roasted eggplant babagannush, chunky fried eggplant and bell pepper shakshuka, fresh dolmas fragrant with currant and herbs, dill-forward tzaziki, and bright and saucy tabbouleh with heart bites of bulgur.
While Brindis is in Green Valley, it is absolutely worth the trip.
