Local butcher shop Lomo Premium Meats opened a restaurant next door, Lomo Grill, on Feb. 6. They plan a grand opening celebration on March 1.
The restaurant sits at 1521 N. Wilmot Rd. The 1,500-square-foot space, formerly a location for New York Pizza Department, seats 26 guests.
With the new restaurant, the team now cooks those same premium cuts to order in a casual setting.
“Our vision with Lomo Grill is simple; our focus is on the beef,” the LOMO team said in a press release. “We want to provide Tucson with a place where great meat meets a comfortable dining atmosphere. Everything we serve reflects the quality standards that built the Lomo brand.”
Furthermore, customers can choose their own steak at the butcher shop and walk through the connecting door into the restaurant, where the cooks will grill the steak as requested.
“We will greet you, we will ask you how you would like your steak cooked (medium rare is best), we will offer a side of beans and tortilla, and everything includes chiltepín salsa and lime,” said Jason Scott, who helped open the restaurant.
As a result, the concept blends butcher shop expertise with a fast-casual model. The team aims to create a consistent and reliable dining destination for the local community.
The menu centers on bold grilled flavors without traditional steakhouse formality.
Signature items include Agua Prieta-style burritos, grilled burgers, and other house specialties cooked over open flame. The carne asada comes simply with cabbage on the inside, while the lime and salsa arrive on the side. The burger patties are blended in house with 100% brisket. The Wildcat Burger also blends bacon, chiles, and cheese with the brisket.
Importantly, all beef at Lomo Grill comes from Lomo Premium Meats. The team also sources tortillas from Tortilla Bryan in Tucson.
Lomo Premium Meats currently operates two butcher shops in Tucson and Green Valley.
A new Oro Valley location is in development at 10785 N. Oracle Rd., Suite 191. The company also plans a new butcher shop and cutting room in Vail in spring 2027.
“We do plan on adding a hood and small kitchen footprint in every Lomo Premium Meats across the state, along with open(ing) the Lomo Grill standalone concept as well,” Scott said.
For now, the team focuses on its March 1 grand opening and daily lunch and early dinner service on Wilmot Road.
Lomo Grill operates daily from 11 a.m. to 6 p.m.
