Cena de Cacao: Tucson’s Chocolate-Inspired Dinner Event

Oct 8, 20251 min read

Chef Christian Padilla will lead a culinary journey on October 28 at The Urban Ranch, blending cacao and culture in a five-course dinner called Cena de Cacao. The event celebrates National Chocolate Day with creative dishes that explore the savory depth of cacao.

Each course connects to the spirit of Dia de los Muertos through flavor and storytelling. Guests can choose a standard menu or an upgraded five-course wine pairing that enhances the cacao-driven experience.

A Menu Inspired by Memory and Flavor

Padilla’s menu highlights cacao’s versatility, using it in both subtle and bold forms.

Flores y Cenzias – Grilled Nopal Masa Tart

  • yuzu goat cheese, cilantro, poblano, cocoa nibs, pickled cherry salsa, chiltepín oil

Las Aguas del Más Allá – Hamachi Aguachile

  • Burnt honey aguachile, cocoa oil, serrano, micro sorrel, blackberry

El Fuego de Recuerdo – Duck Carpaccio

  • Smoked white espresso mist, white chocolate espuma, micro horseradish, toasted peanut, orange habanero ash

Pansa a Pansa – Pork Belly

  • Mole negro, huitlacoche vinaigrette, smoked apple ash, pickled green apple, epazote oil

El Retorno – Cinnamon-Cacao Flan

  • Agave-bacanora caramel, sea salt

Each dish invites diners to explore life, memory, and transformation through the sensory language of food.

General manager Jacob Yeung credits one idea above all: “We’ve grown since then, but the key has always been consistency.”

Stop in for Flaming Chili Oil, Walnut Shrimp, chow fun, or sautéed green beans finished with Sichuan peppercorns. Vegetarian and vegan options are available.
