3 Quick & Tasty Breakfasts

I know you’ve heard it a million times: breakfast is the most important meal of the day. I’m just as guilty as the rest of us in frequently skipping what is one of my favorite meals. My only compliant is that what I make for breakfast doesn’t change much. It’s usually a variation of a few different mainstays – eggs, smoothie, or cereal. (And, of course, coffee). Below are three quick and tasty ideas to add to the repertoire, if you so choose…

Almond Joy Oatmeal

Straight from The Oatmeal Artist is this dairy free oatmeal with shredded coconut, coconut milk, sliced almonds, banana, and a little bit of almond extract. She uses cocoa powder, but I prefer this raw cacao powder. Also, keep in mind the type of shredded coconut you use will make a slight difference. There’s sweetened and unsweetened, as well as strips and strands. Try a different kinds to see what you like. There are also numerous types of coconut milk ranging from light and nearly flavorless to rich, thick and sweet. Unfortunately, unless you know of a local almond source, there is n’t much you can do to make this a more locally sourced dish.

If the spoiler name of this dish from From the Little Yellow Kitchen doesn’t get you excited for breakfast, there’s a box of Cinnamon Toast Crunch somewhere with your name written all over it. This dish, which features a fresh made lemon salad dressing with garlic, olive oil, lemon juice, and salt, should keep you going at least until a late lunch. Unless you’re like me and have the fastest metabolism ever. Oh, and if you can get your hands on some local lemons, arugula, eggs, or bread from either Barrio Bread or Beyond Bread, you’ll love this dish all the more.

Green Tea Smoothie

Courtesy of The Greatist is this smoothie with green tea, banana, honeydew, honey, and almond milk. As always, you can mix it up and get creative. And, don’t forget that the quality of ingredients in any dish will make a huge difference. Seven Cups is my personal preference for quality green tea. Their Misty New Top is a great starter tea if you’re new to tea.

Here’s the breakdown for the blender:

1 banana, frozen ½ a large honeydew melon ¾ cup strong brewed green tea 1 teaspoon honey ¼ cup almond milk
