Nine On The Line with Eddie Coronado of Blanco Tacos + Tequila

Eddie Coronado is the Executive Chef of Blanco Tacos + Tequila at La Encantada. When he’s not overseeing the preparation of award winning tacos and guacamole, you can catch him out and about in Tucson, eating sushi or chicken and waffles. The man is also internet famous with nearly 40,000 Instagram followers (follow him at @ECSINCE80).

1. What was the first dish you had that changed your perspective on food?

Tamales changed my perspective on food because of the simple ingredients and great flavor. I was shocked to know how easy they were to make.

2. What are you eating these days?

I’m eating a lot of fish and vegetables, finding a new love for vegetables.

3.What was the first dish you remember cooking?

Scrambled eggs! I remember being very proud that I made something myself. I made them for my mom on Mother’s Day. My dad taught me.

4. What concept, ingredient or food trend does everyone seem to love, but you just can’t stomach?

Quinoa. I just don’t like the texture.

5. What chef, with us or passed on, would you most like to cook or eat dinner with?

Hard to choose just one, so here are three: Anthony Bourdain, Nobu Matsuhisa and Thomas Keller.

6. What city, other than Tucson, is your favorite place to eat?

Chicago. It’s such a lively city that shows so much pride in their food. Every restaurant you go to believes they are serving the best food possible.

7. Speaking in junk food terms, what is your favorite guilty pleasure?

Philly Cheese steak! I am a sucker for a great sandwich – nothing beats it.

8. Top three Tucson restaurants?

Blanco, Mays Counter and Sushi Garden.

9. With a figurative electric chair in your immediate future, what is your last meal?

Chorizo with potato, over-medium eggs, bacon and grilled flour tortillas. This meal was my favorite meal my grandmother made for me and every time I ate it I would smile!
