Tucson’s Hamilton Distillers are known for their unique Southwestern take on traditional Scotch. Rather than malting barley over peat as they do in the old country, Stephen Paul came up with the idea to use mesquite to craft a single-malt whiskey.
The idea sprung from a casual barbeque in 2006, where the Pauls were barbecuing with mesquite scraps from their custom furniture company, Arroyo Design. As with most good ideas, Scotch was involved.
Paul and his daughter Amanda decided to pursue the concept and opened Hamilton Distillers, the first small-batch distillery in the Southwest. By 2013, three varieties of their signature Whiskey Del Bac were available all over Tucson.
