Eastside breakfast favorite Baja Cafe will open a second location at 2970 North Campbell by May 1. The space was formerly occupied by a Wing Factory.
Kim Scanlan, who owns the restaurant along with chef and partner Gerard Meurer said their eyes had been set on a second location for some time.
“We had been keeping our eyes open for a while and knew we wanted to be closer to campus,” said Scanlan.
While restaurants typically take some time to get open, Scanlan says they will be open before May 1.
“We just don’t have the capital to not get open quickly,” said Scanlan. “The space was remodeled five years ago. It’s all tables, no booths and a little more modern with an open kitchen.”
Baja Cafe will feature the same menu as the Kolb Road location, which includes one of the most inventive pancake menus in town, and a handful of traditional breakfast and regional favorites, such as chilaquiles, nopales, and much more. (Menu link below).
Recently the restaurant made headlines when Food Network Canada announced they would be featuring three Tucson restaurants, including Baja Cafe, BOCA Tacos, and Mother Hubbard’s.
“It was fantastic. They were so fun,” said Scanlan. “They told us it would air in Canada in the fall.”
In the meantime, Baja Cafe is hiring for all positions. And future growth is not out of the question, Scanlan said, however a third location would most likely be in Phoenix.
