You’ve probably heard by now, but in 2015, Tucson was named the first UNESCO World City of Gastronomy in the United States.

To celebrate and to bring recognition to the prestigious designation, Chef Janos Wilder of DOWNTOWN Kitchen + Cocktails will focus this year’s Around The Globe series around four international UNESCO cities of gastronomy.

The first event will feature Parma, Italy from May 24 through July 11. Chef Jerry Alday and his culinary team have created interpretations of classic dishes with ingredients such as Parmigiano Reggiano and Proscuitto di Parma.

Items on the Parma menu will be offered a la carte or as a three-course dinner for $38 per person.

Appetizers

  • Salami Finocchiona, Proscuitto di Parma, Parmigiano Reggiano — Grilled focaccia, tomato jam, poached Yong garlic, $14
  • Octopus Terrine, olives, capers, herbs — Blood orange oil, 18 year balsamico, herb aioli, $12
  • Shaved asparagus, grilled radicchio, squash ribbons, tomatoes, and arugula salad — Parmigiano reggiano, pancetta, Meyer lemon vinaigrette, preserved lemon, $12

Entrees

  • Lasagne bolognese — Rich ragout of pork, pancetta, veal, tomato, onions, and garlic layered with pasta, ricotta, Parmigiano Reggiano, served with garlic bread, $20
  • Goat sugo and olive oil crushed potatoes — Tomato, olives, caramelized onions, shallots, $22
  • Porchetta and creamy polenta — Pork tenderloin wrapped in pork belly, rosemary jus, snap peas, fennel citrus salad, $23

Desserts

  • Torta Barozzi and cherry mousse, $8
  • Crostata with crema di ricotta, mascarpone, and blueberry sauce, $8

Chef Wilder will also offer a cooking class and pop up dinner for each tour, which will be held at The Carriage House, 125 S. Arizona Avenue. Guests will have the chance to sample the tour’s dishes and learn about the gastronomy history from each city.
