The Iskashitaa Refugee Network, an organization that helps empower the lives of refugees, is hosting a food workshop from 10:30 a.m. to 3 p.m. on Thursday, October 27.
The workshop will focus on the pickling of garlic with prickly pear juice and white distilled vinegar.
The Iskashitaa Refugee Network received garlic as a donation from Forever Young Farms, an organization they partner with every year. The Iskashitaa volunteers and refugees helped plant the garlic onsite at the farm.
The majority of the garlic was donated to the refugees who helped plant it, but the remaining amounts will be used in the workshop.
The prickly pear juice used to pickle the garlic in the upcoming workshop was also harvested by Iskashitaa refugees and volunteers.
Not only will the workshop teach guests about their use of local ingredients, but they will also provide a preparation of the prickly pear juice and pickled garlic.
The Iskashitaa Refugee Network will also host an upcoming jujube harvest, which means there is a possibility of candying jujubes for the workshop, too. Other locally grown ingredients may be seen at the event as well.
“Food workshops are wonderful,” Resource and Food Workshop Coordinator Paola Gonzalez said. “They provide a safe environment in which refugees and volunteers alike can share their life experiences and even their diverse knowledge on foods. A lot of their ideas have helped us become more creative with the foods that we harvest.”
