Meatless Monday is a Tucson Foodie feature highlighting a great, local meat-free meal every Monday.

Fantastic sauces have the ability to transform an alright bite into an addictive bite. Think chimichurri, ají verde, and coconut peanut sauce.

However, coconut peanut has a stronger supporting cast at Goodness Fresh Food & Juice Bar.

The Thai Peanut bowl features sautéed kale, brown rice, mushrooms, carrots, plums, broccoli, and sesame seeds with the addictive coconut peanut sauce. The variety of roasted veggies provide a wide range of textures and flavors, all of which happily soak up the coconut peanut sauce — especially the broccoli.
