Meatless Monday is a Tucson Foodie feature highlighting a great, local meat-free meal on Monday.

Heads up: Raijin Ramen is closed on Monday. But we’re not going to publish a Meatless Monday article on a Tuesday, so here goes.

Rich, fatty tonkotsu ramen has exploded in popularity in America over the past few years. However, venture deep into the massive world of ramen broths for countless varieties to tickle your fancy.

In the Veggie Ramen at Raijin Ramen, curly noodles swim in a creamy soy veggie broth. The balanced broth features a delicate sweetness and savory depth that requires no meat.

The bowl also comes topped with charred zucchini, bok choy, green onion, yellow onion, briny seaweed, tender-crisp bean sprouts, cabbage, and pickled ginger for brightness. While the broth is creamy, it’s still light enough for you to quickly slurp down without the lethargy that a bowl of lardy broth would cause.
