
Jalapeño poppers are usually associated with a deep-fried battered outer crust but at Dante’s Fire, Iron Chef Tucson 2023 winner Ken Foy pairs them down to dress them up.
The fried batter gets replaced with a smoky and fresh blister of the bare-grilled jalapeño. The traditional cream cheese filling gets a kick with a touch of Sriracha (no shortages here). A base composition of fire-roasted marinated red peppers, fancy drizzles of scallion oil, and balsamic reduction adds to the maximalist bite. Attention to texture and taste gives you a range of satisfaction with the house candied bacon and asiago foam.
