Owner and chef Heriberto Garcia, alongside his wife Maria Santos, have been the heart and soul behind 3 Margaritas Kitchen for the past five years.
Garcia, originally from Chiapas, Mexico, and Santos, hailing from Oaxaca, both bring a blend of their rich culinary backgrounds to the food truck scene in Tucson.
With over 20 years of experience working at restaurants like Guadalajara Grill and Casa del Rio, Garcia saw an opportunity to create something of his own.
“We came for the American dream, and ended up staying, starting our family, and raising our two girls in our traditions,” said Garcia. The family-operated food truck is not only a business but a symbol of their journey and dedication, with Maria’s sister, Lidia, also part of the team.
3 Margaritas Kitchen began with the staples — tacos, burritos, and hot dogs — but as loyal customers started asking for more variety, the menu expanded. Now, you’ll find much more than just the basics.
The taco plate is a favorite, with options like carne asada, birria, adobada, and more. I went with the adobada and added pineapple — giving it an extra kick! With avocado sauce, salsa, and a squeeze of lime juice, the tacos were a work of art.
Mini chimichangas, quesabirria tacos with consommé, tortas, caramelos, and even a veggie burrito packed with flavor offer something for most eaters.
And don’t forget dessert: churros, plain or strawberry-filled, are a sweet way to end your meal.
Whether you’re craving traditional Mexican flavors or looking for new bites, Garcia’s ever-evolving menu makes 3 Margaritas a must-visit. Plus, with new items in the words, there’s often something fresh to try!
The food truck is open from 10 a.m. – 6 p.m. on Monday – Saturday (closed on Sunday).
