Behold the Autumn Veggie Ramen at Maru Japanese Noodle Shop

There’s no denying that fall is a lovely time of year in Tucson.

While it sneaks up quickly, it’s a welcome relief from the scorching hot summer. One of the more enjoyable aspects of fall in Tucson is how easy it is to “float” between summer and winter. For example, while a thick winter coat might be overkill, you can easily sport a light jacket. At the same time, you can probably still get away with a t-shirt and shorts, too. Likewise, hot soup isn’t such an odd item to order either.

Maru Japanese Noodle Shop serves a unique, MSG-free type of ramen. While they don’t offer that “punch-you-in-the-face” flavor bomb you find in most local ramen spots that make you feel bloated and like it’s time for a nap, they do offer a variety of ramen bowls that pack plenty of flavor. Maru also caters to carnivores, vegetarians, and vegans alike with a number of options for each. You can check out Maru’s full menu here.

Seasonally, the team over at Maru, led by Yoshimatsu’s Yoshimi Tashima, roll out a new bowl or two (or three). Typically in the summertime, it’s a cold ramen. Now that autumn has officially arrived, cold ramen is off the table. For fall 2021, it’s Autumn Veggie Ramen.

Made with a ginger miso broth, vegan kale noodles, and featuring several Japanese vegetables, including kabocha squash, satsuma sweet potato, and lotus root, the Autumn Veggie Ramen may also simply make you feel better. Ginger and satsuma are a great source of energy, the lotus root is an antioxidant (and good source of fiber), and kabocha squash is said to help boost your immune system.

The seasonal Autumn Veggie Ramen at Maru is $11.50 for a regular sized bowl and $13.50 for a large. It’s available for dine-in, pick-up, and delivery via Grubhub, DoorDash, and UberEats.

Maru Japanese Noodle Shop is located at 1370 N. Silverbell Rd. at Speedway, in the Alberston’s shopping center. For more information, including contact, hours, and menu, visit marunoodle.com.

General manager Jacob Yeung credits one idea above all: “We’ve grown since then, but the key has always been consistency.”

Stop in for Flaming Chili Oil, Walnut Shrimp, chow fun, or sautéed green beans finished with Sichuan peppercorns. Vegetarian and vegan options are available.

“Running this kitchen has been a labor of love, but the numbers just aren’t adding up anymore, and as parents, we have to make the hard choice to step back and take care of what matters most at home.”
