Free workshop invites Tucsonans to nominate heritage dishes

Tucson food lovers can help shape the city's culinary legacy at the Tucson Heritage Dishes Workshop. Tucson City of Gastronomy will host the free community event on Saturday, August 15, from 11 a.m.-2 p.m. The gathering takes place at the Tucson Museum of Art's Stonewall Community Room, 140 N. Main Ave.

The workshop invites residents to nominate and discuss the dishes that define Tucson and the Arizona-Sonora borderlands. Organizers are partnering with renowned ethnobotanist and food historian Gary Nabhan on the Tucson Heritage Dishes Project. The Santa Cruz Valley National Heritage Area supports the effort, which aims to document generations of regional food traditions. Tucson Foodie editor Jackie Tran will facilitate the event.

What the Tucson Heritage Dishes Workshop Covers

Participants will review a draft list of heritage dishes and offer feedback on what belongs. Attendees can share personal knowledge of Tucson's food traditions and suggest dishes the list might be missing. Organizers designed the session for lifelong Tucsonans, home cooks, chefs, food historians, farmers, and restaurant owners alike.

The draft list already includes several beloved regional specialties. Here is some of what organizers plan to discuss:

  • Chimichanga

  • Cheese crisp

  • Sonoran-style capirotada

  • Carne machaca con verduras

  • Enchiladas Sonorenses

  • Prickly pear margaritas

  • Pan de cemita

  • Mesquite-smoked whiskey

  • Yaqui guacavaqui

Organizers expect the list to grow as attendees add their own family recipes and memories. Every suggestion helps build a fuller record of the region's food history.

The Slow Food Ark of Taste Explained

The Slow Food Ark of Taste catalogs foods, produce varieties, and animal breeds at risk of disappearing. Slow Food International runs the program to preserve culinary traditions tied to specific cultures and places. Each entry represents a story about the communities and ecosystems that kept a food alive for generations.

Slow Food encourages farmers, cooks, and everyday consumers to nominate at-risk foods for inclusion. The organization then works to reconnect these products with the people who cook and eat them. Tucson already holds a strong place in the catalog.

Gary Nabhan has long championed the connection between Tucson's identity and its food heritage. Nabhan describes Tucson as a city whose food heritage forms a core part of its identity. That legacy helped Tucson become the first UNESCO City of Gastronomy in the United States in 2015.

"Tucson and the Santa Cruz Valley already have more heritage food on the Ark of Taste than nearly any other metro area in the country," Nabhan said. "But what we still lack is a knowledge of what prepared foods and drinks, are most strongly related to Tucsonans' cultural identity."

Chef Ambassador Mateo Cancio Returns From Lyon

The workshop agenda includes lunch from noon to 1 p.m., followed by a chef demonstration. Chef Ambassador Mateo Cancio will lead a cooking demonstration from 1-1:30 p.m. Cancio recently represented Tucson in Lyon, France, carrying the city's culinary reputation to an international stage.

Cancio will prepare chiltepin flan, one of the dishes under consideration for the Ark of Taste. The dessert reimagines traditional flan with chiltepin, the tiny wild chili native to the Sonoran Desert. Attendees will receive tastings of the dish after the demonstration concludes.

Chiltepin holds a special place in the region's food culture. Sonoran cooks have long used the pepper to season everyday dishes, and its popularity has spread across the border into Tucson kitchens.

How to Attend the Free Tucson Event

The Tucson Heritage Dishes Workshop is free and open to the public. The venue offers free parking, and the event welcomes all ages. Organizers encourage anyone who cares about Southern Arizona's food traditions to register and attend. Reserve a spot here.

Whether visitors come to taste chiltepin flan or to nominate a family recipe, the workshop offers a rare chance to shape culinary history. Tucson's food story continues to grow, one dish at a time.
