How many ways are there to Benny?
Eggs Benedict traditionally consists of English muffin halves topped with poached eggs, Canadian bacon, and hollandaise. Since the oldest-known recipe for it has been around for over a century now, chefs have been adding their own regional and personal twists to the dish.
For example, Eggs Florentine substitutes the ham with spinach. Eggs Chesapeake substitutes the ham with a Maryland blue crab cake instead.
At downtown restaurant Nook, the Godfather Benedict swaps out the Canadian bacon for prosciutto. Their interpretation also adds arugula and balsamic drizzle for a bit of bitter and sweet tang to balance out the rich hollandaise.
Although the balsamic drizzle may seem minor, the boost of acidity makes all the difference. If you want it even lighter, get a mimosa. Definitely.
