While Pionic Pizza at 2643 N. Campbell Ave. closed about a week ago, Hoki Poki is already taking over the space.
The local poke bowl restaurant announced it will open its third location at the former pizzeria, with the fourth location opening afterward at 10235 E. Old Vail Rd. in Vail.
“I absolutely love this location [on Campbell],” said Bin An, owner of Hoki Poki and MiAn Sushi & Modern Asian Cuisine. “It’s close enough to the U of A and corridor where people are heading home to the foothills.”
Although pizza and poke require a different creation process, Pionic’s fast-casual layout and kitchen ended up working out conveniently for An.
“It’s designed exactly the way I would have designed it for Hoki Poki,” An said.
Menu options and operating hours will be consistent across the locations as listed on Hoki Poki’s website.
Customers create their own $9.75 poke bowls, choosing from a large variety of protein, including salmon, ahi, albacore, yellowtail, and more; a base, such as white and brown rice, or salad; and a variety of mix-ins and sauces.
“I’m excited about the way Hoki Poki is headed,” An said. “I think America is headed towards the fast casual. We have people coming to the east side location five or six days a week.”
