SUMMER WEEKDAY SPECIAL: Shared Eggs Benedict & Pancake Feast for Two at Baja Cafe

The breakfast favorite is offering a shared breakfast for two at an unbeatable price (and at all three locations)


One of our favorite success stories at Tucson Foodie is Baja Cafe.

Opened in 2014 by Kim Scanlan and Gerard Meurer at 7002 E. Broadway Blvd. tucked behind The Gaslight Theater, the restaurant quickly gained favorable attention for their warm service and creative range of pancakes and Benedicts.

No joke – as of this writing, the menu is home to 12 original Benedict creations, like the Wolverine (English muffin topped with herb cream cheese, fire roasted poblanos, chipotle bacon, poached eggs, house-made avocado hollandaise, pico de gallo, onion straws) and the Wyatt Earp (grilled jalapeno popper tamale cakes, green chile tomatillo sauce topped with seared pulled pork, chipotle bacon, fire roasted green chilies, onion, tomatoes, melted cheddar and Monterey jack, topped with poached eggs, avocado hollandaise, pico de gallo and queso fresco).

On top of that, there’s 7 original pancakes, including a classic buttermilk, Snickerdoodle, and the Pineapple Express (gooey pockets of orange, brown sugar, butter and pineapple chunks. Topped with a vanilla bean cream cheese glaze and whipped cream).

In fact, Baja Cafe was even featured on Food Network Canada’s “You Gotta Eat Here.”

Of course, while we encourage you to try all of the different Benedicts, for this specific breakfast feast, there’s only one you’ll be able to try: the Shelby Benedict. It’s a toasted English muffin, topped with seared spinach, grilled tomatoes, asparagus, ham, two strips of bacon, two poached eggs, and house-made hollandaise sauce. If you’ve ever had a Benedict at Baja Cafe before, you know it’s a ton of food. If you haven’t, trust us: it’s a lot of food.

Additionally, you’ll get a choice two small pancakes and two drinks (soda, tea, or coffee).
