Sicilian street food meets Sonoran street food in Chef Devon Sanner’s signature fusion dish Elote Arancini at Zio Peppe.
The grilled corn swathed with creamy corn stock risotto is encapsulated by a crunchy fried masa exterior. Finished with a blanket of tangy lime crema the corn balls are balanced with the cheesiness of queso fresco, and a classic dusting of spicy tajin. This corny dish is a refined creation made with techniques proof of Chef Sanner’s training under renowned Janos Wilder and Alinea.
