Just in time for summer, Downtown Tucson’s Proper has rolled out a new, seasonally inspired menu.
Guests will find a broad range of new lunch and dinner items featuring locally sourced ingredients, such as the Top Knot Chicken Breast with Serrano ham, dijon emulsion, summer squash, and snap peas and the Turf and Turf, a Kale ash coated NY strip, served with pan seared golden potato pave, and house steak sauce. But don’t worry – your favorite appetizers, such as Prop Prop Wings and the House Board are still available.
In addition, the menu features a new layout that’s more legible with less obscure gourmet jargon.
“We’re not throwing words out that are too far above people’s heads.” said Executive Chef Kris Vrolijk. “A lot of people aren’t exposed to that stuff, and sometimes they feel intimidated by it.”

Vrolijk credits his cooking creativity to the different cultures he has been exposed to.

“One of the coolest parts of food is the way the colors combine on a plate and the way the flavors melt together,” Vrolijk says. “I’ll go to a Filipino barbecue and ask myself, ‘what’s that?’ and ‘what’s that?’ It’s just all being soaked in.”
