Coca-Cola and Dr. Pepper are known to make their way into savory southern dishes, but The Parish’s creative executive chef Travis Peters will give you wings with his Red Bull vinaigrette.

PY Steakhouse at Casino Del Sol Resort is hosting their third Dinner with Chefs at 6 p.m. on Tuesday, March 28. Peters is this month’s featured chef.

Each month, Casino Del Sol executive chef Ryan Clark will collaborate with a different local chef for a three-course wine dinner highlighting two different cuts of beef. No cuts of beef will be repeated for the entire year, so 24 different cuts will be used.

A different chef will be featured each month as well, so the techniques and styles will be excitingly diverse.

Amuse
  • PY Steakhouse Bread Service
  • Chef’s interpretation of the Michelada cocktail
First Course
  • Dry-Aged Eye Round Carpaccio – red coal charred, Red Bull vinaigrette, beet pickled egg + cauliflower, baby arugula, Barrio crostini
  • Paired with 2014 Pinot Noir, Sea Smoke “Southing”, Central Coast
Second Course
  • Marinated + Smoked Beef Belly – Dr. Pepper marinade, warm kimchi brussels, crispy taro root, broth
  • Paired with 2013 Cabernet Franc, Consentino “The Franc”, Lodi
Third Course
  • Peanut Butter Mousse – dark chocolate, corn flakes, caramelized banana + gelato
  • Paired with Williams and Humbert , Dry Sack Solera 15 Year Oloroso
