Tucson’s got a fever and the only prescription is more rosé wine.

Wildflower is hosting a special rosé wine pairing dinner at 5.30 p.m. on Monday, August 28.

Dinner will be prepared by executive chef Kevin Handt, and advanced sommelier Regan Jasper will be pairing the perfect glass of rosé with all four courses.

Although Jasper chose special wines for dinner, he also shared some knowledge for affordable quality rosé at home.

“While I’m a fan of Old World classic rosés, like Domaine Ott and Domaine Tempier, I also enjoy New World roses like Dos Cabezas out of a can,” Jasper said. “The cool thing is that there are so many California wineries making small production delicious rosés.”

First Course

• Compressed Melon Salad – Burrata, Pickled Fennel, Shaved Radish, Calabrian Chili, Saba, Citrus, Almond Brittle

Second Course

• Roasted Alaskan Halibut – Sweet Corn, Heirloom Tomato, Baby Leek, Lemon Verbena, White Verjus

Third Course

• Tortelloni “Pasta e Fagioli” – Tomato Braised White Bean, Chanterelle Mushroom, Pancetta, Shaved Mirepoix, Vin Santo Glaze

Fourth Course

• Goat Cheese Panna Cotta – Cherry Confiture, Pistachio Crumble

All four courses include a unique rosé wine pairings from Regan Jasper.
