If you give BOCA Tacos y Tequila executive chef Maria Mazon some lemons, lemonade isn’t on top of her to-do list. It’s probably salsa.
Give her Girl Scout Cookies and she’ll make salsa too, like she does every year now. This year, she’s stepping it up with a Thin Mint mole.
“I use epazote in my mole, and it’s kind of like mint, so I use Thin Mints here,” Mazon said. She pushes the chocolate richness and sweetness further with the addition of Abuelitas Mexican chocolate.
The pollo tacos would be the “most traditional” pairing, but follow your heart. This mole is available by request for a limited time only, so hurry in before it’s gone for good.
