Contrary to popular opinion, pizza doesn’t need cheese. While it’s crucial for a margherita pizza, a marinara pizza doesn’t even include it.

If you’re vegan — excluding cheese means you can pretty much eat at any pizza place. At Reilly Craft Pizza & Drink, the Vegan Pizza is topped with tomato sauce, garlic, mushroom, peppers, eggplant, onion, and olive oil.

The tomato sauce alone deserves respect with its delicate balance of freshness, acidity, and freshness. The wide range of glutamic acid-rich vegetables provide complex savory depth.

Since the mushrooms are quartered instead of sliced, they provide a more substantial meaty chew.

For an extra boost of umami, add a sprinkling of nutritional yeast for $1.
