COMING SOON: Hillhouse Coffee to open a new location on Kolb Road

From Poco & Mom’s to Sonoran Brunch Co., there’s something new brewing in the building at 1060 S. Kolb Rd. Hillhouse Coffee, which is currently serving at 8991 E. Tanque Verde Rd., is moving into the building, making it the owners’ very first brick-and-mortar location.

Logan Power and Eric Haberman opened Hillhouse Coffee at The Gardens at Bear Canyon back in February 2022 and as of Thursday, March 23, that location is officially closed.

There isn’t an exact date yet for the new location’s Grand Opening at 1060 S. Kolb Rd. but they’ve got their sights set on May of this year. There will indeed be a drive-thru and we’re still waiting to confirm indoor seating will be an option.

Since its inception, one of the goals at Hillhouse Coffee is to eliminate long wait lines, and to make that happen, Power and Haberman developed something called Cold Roast (not to be confused with cold brew).

“It’s essentially a coffee that we steep,” said Power. “It’s different from cold brew and the ratio of coffee to water, steeping time, and a few other elements as far as the roasting that we’ve manipulated. We put this cold roast in kegs, and essentially what we do is just like beer — you pull back from the tap. We have our cold roast coming out in a much faster window than an espresso machine does.”

So, keep an eye out for an official opening date.

Hillhouse Coffee is currently located at 8991 E. Tanque Verde Rd. The new spot will open in May at 1060 S. Kolb Rd. For more information and updates, visit hillhousecoffee.com.
