By Matt Sterner

“Nine on the Line” is a chef Q&A series asking the same nine questions to different chefs.

From sizzling fajitas to eye-catching enchiladas, Delicias Mexican Grill captures the essence of Mexican cuisine, making it a beloved destination on the south side for locals and visitors alike. Known for its vibrant and welcoming atmosphere, the restaurant offers a diverse menu showcasing traditional dishes crafted with care and expertise.

We chatted with Evelyn Romero, General Manager of Delicias, and got to know her on a different level. So, without further ado, I present Nine on the Line.

1. In what ways does Delicias celebrate Mexican food culture, both in terms of flavors and dining experience?

Mexican food culture is a culinary treasure that offers our customers a great variety of flavors, aromas, and textures to delight our customers’ palates. It’s important for us to maintain the originality of our product, techniques, and process.

2. Can you tell us about the inspiration behind Delicias’ menu and the dishes you offer?

Our menu is inspired by culture and tradition. Three of the main influences in our traditional recipes are the Mayans, Aztecs, and the Spanish.

3. What makes the flavors at Delicias Mexican Grill unique, and how do you stay true to traditional Mexican cuisine?

Delicias Mexican Grill maintains its original and unique flavor by keeping traditional family Mexican recipes that have been passed down from generation to generation. It’s a mix of where the owners are from, Delicias Chihuahua and ObregĂłn Sonora.

We stay true to our cuisine by using only fresh prime materials and products!

Recommended by our customers and employees our fan-favorite dishes are our molcajetes (hot and cold), fajitas, and large variety of soups that we have all day, every day (pozole, albĂłndigas, caldo de queso, sopa de tortilla, cocido de res, menudo red and white, carme en su jugo and many more).

5. What role does community play in the culinary journey of Delicias, especially concerning Mexican food traditions?

Our community plays an important role in our culinary journey. They have invited us and considered us to participate in community events that let us reach more people in our community. They also try our Mexican food traditions at our restaurant.

6. Who would you guys most like to cook or eat dinner with?

I would love to cook and have dinner with Gordon Ramsay!
