R&D Dinner at Thunder Bacon Burger

**1st bite** Brûléed pork belly with chipotle balsamic pearls and a shot of bacon washed whiskey. **Appetizer** Chorizo, black bean and queso fresco patty, onion jam, fluff, and pepperoni chili crisp slider. Served with a giant chorizo and cheese tater tot topped with Hot Honey and chili crisp, cured Quail yolk. **Salad** Burrata and burnt ends, chopped pecans, grilled peach slices rolled in chili oil, fresh basil, cucumber, red onion slivers with an EVOO drizzle **Main course** Fresh ground veal patty, Taleggio cheese, black truffle slices, crispy speck, malt whiskey blood orange marmalade on a focaccia bun. Served with a side of potato pave fries and cherry ketchup. **Finish them** Cinnamon sugar fry bread, chipotle raspberry cheesecake, chocolate dipped raspberries and candied bacon crumble.
