During this intimate class, Chef Claudia will guide participants through the process of preparing enchiladas sonorenses from start to finish. You won't just watchâyou'll cook alongside her at your own station, learning the techniques and traditions behind the dish before sitting down to enjoy what you've prepared.
This class is part of our Resilience Kitchen Program: Tucson Heritage Dishes Project, an initiative documenting and celebrating foods that help tell the culinary story of Tucson and the borderlands. Enchiladas Sonorenses are among the dishes being explored for nomination to the Slow Food Ark of Taste, an international catalog dedicated to preserving distinctive foods and culinary traditions at risk of disappearing.
