Tucson’s east side is about to get a fresh hit of flavor with the arrival of Marc’s Blue Smoke BBQ.

Set against the stunning backdrop of Medella Vina Ranch, located at 4450 S. Houghton Rd., this new barbecue joint promises to be more than just a place to grab a meal — it’s set to become a community hub where food, friends, and good times come together.

Marc Panas, the visionary behind the concept — with a grand opening scheduled for Sunday, March 3 — brings with him a hefty load of experience and passion for the craft.

His journey, shaped by decades of work in the restaurant industry speckled with life-altering events, culminates in the creation of this smokey venture.

Family Traditions

Having grown up in a military family, Marc’s childhood was marked by a nomadic lifestyle, exposing him to diverse cultures and cuisines. It was during these formative years that his fascination with food took root, nurtured by his family’s tradition of gathering around the table to share meals prepared with love. 

The seeds of Marc’s barbecue expertise were sown early on, learning the ropes from the matriarchs of his family — his great-grandmother, grandmother, aunts, and his mother. Their teachings instilled in him not just the technical skills of cooking but also the importance of crafting dishes from scratch, with each recipe bearing the stamp of tradition.

Marc’s approach to barbecue is rooted in simplicity and authenticity — side-stepping the confines of regional styles as he embraces a philosophy that celebrates the essence of Arizona barbecue — a melting pot of flavors influenced by local flavor profiles. From brisket to St. Louis ribs and pulled pork, every dish reflects Marc’s dedication and appreciation for barbecue.

Overcoming Obstacles

However, Marc’s journey to Blue Smoke BBQ wasn’t without its challenges.

A near-fatal car accident and a battle with cancer tested his resilience. Fuelled by the belief that if he could overcome such adversities, he could certainly conquer the world of barbecue — which acted as a source of creativity and peace of mind throughout it all — Marc set his sights on bringing his vision for a barbecue restaurant of his own to life.

Located on the scenic property of Medella Vina Ranch, Marc’s Blue Smoke BBQ will beckon visitors with the scent of wood — pecan, hickory, and oak among others — fire, and smoke permeating the air.

Beyond the meat, Blue Smoke will offer a welcoming space for the community to gather and connect. With a focus on fostering meaningful relationships, Marc plans to host a variety of events, from bike nights to law enforcement appreciation gatherings, creating opportunities for people from all walks of life to come together over great food and camaraderie.

As the grand opening approaches on Sunday, March 3, Marc’s Blue Smoke BBQ is poised to become not just another dining destination, but a welcomed hangout where memories are made and food traditions are honored.
