If you’ve yet to eat at 520 Taco Stop, you’re truly missing out!

It’s tacos and burritos aplenty but what really strikes my fancy are the vegan quesabirria tacos. They’re so pretty, juicy, and crunch — great flavors all around. They’re also not too salty and the sides that come with the tacos make everything even better.

Vegan quesadillas are also on deck, ready for you to try.

This summer, 520 Taco Stop, which can be found at 10290 E. Speedway Blvd. (the corner of North Houghton Road and East Speedway Boulevard), is going to be open  Thursday – Sunday. Catch them dishing out the goods from 10 a.m. – 9 p.m. on Thursday – Saturday and 11 a.m. – 8 p.m. on Monday.

Keep in mind that their menu is about 50% vegan so if you’re craving meat they have that too!

Lesser known and underrated are 520 Taco Shop’s Bacon-Wrapped Burrito and Carne Asada Burrito. I always go for the Jackfruit Vegan Birria but do whatever floats your boat!

Heads-up: you may fall head over heels.

520 Taco Stop is located at 10290 E. Speedway Blvd. For more information, follow the food truck on Instagram.
