Some go heavy on red or green sauce, others split the two, and many top the plate with a fried or poached egg. La Chingada's Chilaquiles Divorciados features a split of red salsa and green salsa on their house-made tortillas with two sunny side up eggs, crema, cilantro, and queso. Furthermore, you have the option to jazz it up by adding a rib-eye steak vaquero (cowboy) style.

Seis Kitchen is one of our favorite spots for just about all things Mexican Food. Make a point to try their breakfast chilaquiles plate with all the smashed beans, crispy potatoes, fried eggs, and saucy fixings your heart desires. Meat eaters can even add Birria if they're feeling extra hungry.

Teaspoon is much more than a breakfast spot! While they’re well known for their signature dishes like frittatas and bubble waffles on their menu, their Chilaquiles Con Pollo — featuring corn tortillas, two over-easy eggs, red onion, Monterey Jack cheese, avocado, and shredded chicken, topped with red sauce — is one of the best sellers on the menu.

@Casaveratucson opens Aug. 12 at 7265 N. La Cholla Blvd., bringing regional Mexican cuisine to the former Tamarind space.

The 7,000-square-foot restaurant seats 200 guests with a large patio, and the design draws inspiration from a warm, old-world hacienda. The family behind Casa Vera is also known locally for Guadalajara Original Grill.

Casa Vera will be open daily from 3-9 p.m. Reservations are available through @opentable or by emailing reservations@casaveratucson.com.
