A Five-Course Exploration
The event, called Viaje Turístico, creatively highlights tourist stops around Puerto Rico:
- Piñones (Amuse)
- Mini Alcapurria – green banana and beef fritter, recao aioli, pike spheres
- Maricao (First Course)
- Watermelon Salad – fennel, radish, watercress, pomegranate
- Maunabo (Second Course)
- Grouper – garbanzo bean ragout, chorizo Pamplona, cilantro foam
- Cayey (Third Course)
- Boricua Plate – pork belly, mamposteao de gandules, tamarind sauce
- Intermezzo
- Passion Fruit & Basil Sorbet
- Jayuya (Fourth Course)
- Costilla de Res – celery root puree, carrot, red wine sauce
- Guayanabo (Fifth Course)
- Tembleque – coconut crème, guava spheres, sesame seed granola
