Foxy Roxy’s Chicken n Cone sizzles with quirky wing flavors on the go

Roxanne “Roxy” Berrellez worked at a call center for the past 22 years before quitting early May to follow her dream. Now, she and her husband Guillermo Berrellez operate Foxy Roxy’s Chicken n Cone.

In October 2018, the duo started their food business with tent events. On April 1, they launched their mobile trailer and quickly gained a loyal following.

Now parked at 2125 S. Craycroft Rd., Foxy Roxy slings out a wide assortment of delightful fried foods; nearly the entire menu is fried. Offerings include chicken wings (bone-in or boneless), shrimp, loaded fries, waffles, burgers, mac & cheese bites, cheese sticks, grits, and more.

The flagship Chicken n Cone ($10) features a house-made waffle cone filled with fries and wings, which is drizzled with maple syrup. The syrup tames the fire of the hot sauce, then drips down into the fries for an addictive sweet-and-salty bite.  The waffle cone doesn’t add much flavor-wise but is convenient for on-the-go eating.

While boneless wings are more convenient for mobile eating, the bone-in wings are the star. Baked and then fried, the juicy meat comes cleanly off the bone while also boasting a crunchy skin.

The most difficult part of the experience is choosing the wing sauce:

The Buffalo sauce is close to what you’d expect from a standard Buffalo sauce, perhaps with more garlic. The Chili Chamoy is where you’ll need to watch out, though; they add a 1,000,000 Scoville unit extract.

Thankfully, the kitchen adds it to order, so you can tell them to hold back (or add more if you’re sadistic). The punchy tanginess of chamoy is strangely addictive; it’s not for everyone, but if you love Tostilocos, you’ll probably love this too.

Although chicken is the namesake star, don’t miss out on the shrimp ($13 in a cone or bowl). Sourced from Guaymas, the shrimp are breaded with a saltine cracker crust for a unique buttery crunch.

The Single Waffle Burger ($10) doesn’t sound fried; however, the Belgian waffles (used for buns) are deep-fried and drizzled with maple syrup. They sandwich a griddled, seasoned beef patty with cheddar and Havarti cheeses for an over-the-top burger.

Catch the bright orange truck from 11 a.m. – 3 p.m. Monday through Thursday, 11 a.m. – 8 p.m. Fridays, and 2 – 10 p.m. Saturdays. Hours are subject to change, especially if they have to operate at an event, so check in with them via phone or social media to be safe.
