One person’s fungus is someone else’s delicacy. Él Mexicano is hosting a “Taco Pop-Up” to-go at Batch Cafe & Bar from 4 – 6 p.m. on Friday, July 24.
On the menu is Tacos de Huitlacoche with Oaxaca cheese. So what exactly is it?
It’s literally a fungus that grows on ears of corn — also known as corn smut and Mexican truffle —and the plant disease is a delicacy in Mexico. The fungus causes the kernels to swell up into mushroom-like growths called galls.
Huitlacoche has a unique taste, too. It has an earthy, sweet, and savory taste with flavors of both mushrooms and corn. In addition, the fungus forces a metabolic process inside the corncob to create healthier nutrients.
Él Mexicano will be posted up for just a couple of hours outside of Batch Cafe and Bar, so be sure to make it down there to get a few rare tacos to-go.
