Ten55 Brewing Company’s original taproom permanently closed, but never fear — the brewery is still alive and reincarnating as Ten55 Brewing and Sausage House downtown.
Note the “Sausage House” part of the name; the downtown joint is inspired by Bavarian beer halls. This means guests can expect locally-made sausages, rare German-style brews, large communal tables, and more. Grilled cheese sandwiches and Belgian fries will also be a main attraction.
Executive chef Ivor Cryderman and Forbes Meat Company created a full menu with 15 custom sausages ranging from traditional Polish styles and bratwurst to unorthodox rabbit, venison, and vegetarian sausages.
Diners can expect use of Ten55’s beer in the cuisine as well. The Polish Leap sausage utilizes Ten55’s Leap Pale Ale with Cryderman’s great-great-great grandmother’s Polish sausage recipe.

“The recipe has been in my family for generations,” Cryderman said in a press release. “It’s pretty exciting to be able to share it with Tucson.”
Lighter fare such as salads will also be available.
On the sweeter side of things, Ema Peterson of Beer Geek Bakery will provide her signature beer-centric baked goods.
The 3,880-square-foot establishment between 6th Avenue and Scott Avenue at 110 E. Congress St. will incorporate the history of the building. Ten55 Brewing Company co-owners Chris Squires and John Paul Vyborny worked with FORS Architecture + Interiors restore features such as the original brick walls and wood beam ceilings.
With nearly century’s worth of print ads from past tenants of the building discovered, Ten55 worked with Saywells Design to integrate the ads into their own ads, menus and other design pieces.
Ten55 will host its grand opening on Saturday, August 11. Mayor Rothschild will attend the ceremony to tap the first keg.
Festivities will continue on Sunday, August 12 with a frühschoppen, a traditional sort of Bavarian brunch.

While operating hours have not been finalized, Ten55 will be open for both lunch and dinner.
“We want this to be a meeting place,” Vyborny said in a press release. “A place where anyone can relax and grab a delicious meal and a cold beer with friends, family, and coworkers.”
